Shelf Life: Fresh Périgord truffles are best stored wrapped in a paper towel and placed in an open paper bag inside of your refrigerator. This will give them a shelf life of up to ten days. If you need them to last a week longer, store them in a sealed container with uncooked rice upon receiving. Be aware that the rice may absorb and remove some of the flavor from these delicacies, however. If you choose this method, don’t throw the rice out once you use your truffles! Instead, use it in a risotto for a tasty truffle-flavored meal.

Tips: As with all truffles, black Périgord French truffles should be sliced into pieces as thin as possible. This will allow you to get the richest flavor out of them that you can.
